Ingredients

  1. 2eggplant (250gm)
  2. 1/2 cupgreen peas
  3. 1/2 inchginger grated
  4. 2onion sliced/chopped
  5. 6-7garlic cloves finely chopped
  6. 2tomatoes finely chopped
  7. 1green chilli finely chopped
  8. 2-3 tbspoil
  9. 1/4 tspturmeric powder
  10. 1/2 tspred chilli powder
  11. 2 tspcoriander powder
  12. to tastesalt
  13. 1/2 tspgaram masala powder
  14. 1/2lemon juice
  15. handfulfresh coriander

Cooking Instructions

    First wash and wipe the eggplants, apply some oil on it and roast till all the skin off the eggplant charred and the inner flash becomes soft.

    Let them cool, peel off and remove all the charred skin and then mash it. keep aside.

    Now heat oil in a pan, add finely chopped garlic and saute for few seconds.

    Next to add onion and fry until nice golden in color, while stirring.

    Now add turmeric powder, red chilli powder, coriander powder and saute well.

    Now add finely chopped tomatoes and green chilli, saute well, also add green peas and salt, saute well.

    Cover the lid and cook for 2 mins on low heat till the peas and tomatoes gets soft.

    Now add mashed roasted eggplant and mix well with masala.

    Cook for few minutes (3-4 mins). add garam masala powder, lemon juice and fresh coriander, mix well and switch off the heat.

    Delicious baigan bharta is ready, serve with rice or roti, goes well with both.
