Sometimes you need something quick and if you like cookie dough then these are the answer! We have played about with our ingredients a few times previously and this was the nicest combination. My recipe makes enough for 6-8 espresso cups or 4-6 ramekins if you prefer.

Ingredients

  1. 1 cupplain flour
  2. 1/2 teaspoonbicarbonate of soda
  3. 1 teaspoonvanilla extract
  4. 100 gdark chocolate chips
  5. 50 gmilk chocolate chips
  6. 1large egg
  7. 3/4 cupsoft unsalted butter
  8. 3/4 cupbrown sugar
  9. 1 teaspoonsea salt

Cooking Instructions

    You’ll need a medium size bowl. Mix together the butter and the sugar to make a paste and slowly add the egg and the vanilla. Then add the flour, salt and bicarbonate of soda. Mix the dough together and add the chocolate chips.

    Divide evenly between your cups / ramekins (don’t fill to the top because they expand as they cook). Pop them into the microwave for approx 60-90 seconds depending on your microwave power. I took mine out when they had risen to the top with little bubbles which was approx 1.20 minutes. You can leave to cool down for 5 minutes if you like. Enjoy 💕
