Black rice porridge with greek yoghurt,fruits and flaked almonds

I felt in love in this dish and it became my favourite breakfast these days. I can't get enough of it!!
The whole process of cooking black rice might look time consuming. To save the time in the morning I started to cook a bigger batch a night before and I make portions for few days. In the morning its just a matter of heating the rice up and adding some water and serve it with fruits. Here is one of the options how I serve it.
It taste awesome and I have loads of energy in the morning as the dish is full of complex carbs. Good carbs!! 👌💪

Cooking Instructions

Boil the rice in salted water on the medium heat

Add water if necessary. After 40 - 45 min rice should get soft and it will become glutinous. The water should get thicker and the whole mixture should have a consistency of the porridge. If it's not like that continue simmering adding water if needed.

Mix honey and greek yoghurt and pour to the bottom of the bowls

Pour the rice mixture into the bowls

Top it up with sliced banana, other fruits and flaked almonds.

The recipe is Persian but I am sure it is inspired by the American Parfait. I used Walnuts as I have a really wonderful stash of walnuts from Kashmir. So, this is how recipes change and take different shapes and flavours when each one of us improvises with local ingredients. Instead of whipped cream, I used Greek yoghurt which is healthier and easier to use.For this pomegranate parfait, I have used plain yoghurt and condensed milk. Pre-sweetened yoghurt does not give the same taste. You are probably wondering what kind of recipe this is or if this is a recipe at all. Well, this easy one step recipe is so healthy, full of proteins, and carbohydrates and sooooo good for you.When we first moved to Greece, I stayed at my cousins house until we were settled in to our home. My aunt asked me if I wanted to try some rice with yogurt for lunch, I wasn’t sure what it was but I knew it had to be tasty.. A couple of minutes later she handed me a bowl of rice and yogurt, I looked at it as if it was something from out of this world. My cousin on the other hand, took her bowl and started to combine the yogurt throughly into the rice. I followed her lead and guess what; it was and still is seriously that good!!. 🙂Instead of just having a bowl of plain rice or a bowl of plain yogurt try this wonderful simple, and yet tasty rice dish. (I prefer brown rice with yogurt but wasn’t able to find any so I used white rice in my recipe).I have tweaked my aunt’s original recipe to make it a bit more tastier, and I do hope you enjoy it. 🙂 Foodzesty -
