Ingredients

35minutes
Makes 8 chunky straws
  1. 190 gFlour (sieved) use SR for a different texture
  2. 110 gbutter (diced)
  3. pinchSalt
  4. 75 gmature cheddar grated
  5. 25 gfinely grated parmesan
  6. 1/4 tspmustard powder
  7. Pinchcayenne pepper
  8. 1egg yolk
  9. 2-3 tbspwater

    Sieve the flour add salt, mustard powder and cayenne. Dice butter into small cubes and rub in until fine breadcrumb texture. If it’s a hot day or you have hot hands you might need to refrigerate to prevent butter from softening.

    Grate both of the cheeses (keeping a tiny bit back for topping) Stir lightly into the breadcrumb mixture. Make a well, add in egg yolk and a couple of tbsp of cold water. Cut in with a round bladed knife. To form a dough. Add a tiny bit more water to help combine if necessary.

    Wrap and chill for a 5 minutes.

    Roll the mixture between two sheets of baking parchment to form a thick rough square about 2cm deep. Sprinkle with remaining cheese and more cayenne if you like them spicy.

    Cut into 2cm wide sticks

    Bake in preheated oven at 190c for 10-15 minutes or until golden brown and cooked through.
