Who doesn't like cupcakes especially when they are spongy and moist and when you take a bite,it literally melts in your mouth.For those wanting to go into cupcake business I guess this recipe will be of help.
Cooking Instructions

In a bowl of a stand mixer,add butter,oil and sugar and beat untill flufffy and pale in colour

Beat in your eggs one after another for about 5 minutes

Mix flour,baking powder,baking soda together in a bowl.Don't forget to sieve if your flour, baking powder or soda have lumps or dirt in them.

Gradually alternatively add in your flour mixture and butter milk in three addition i.e you pour one third of the flour and then one third of milk and beat.Repeat this process three times.With this you get a very smooth batter without lumps

Layer your cupcake pans with liners and fill each hole about 3/4

Set your tray at the middle rack of your oven

Bake @ 230 for 15 to 20 mins depending on your oven temperature

These two flavor cupcakes combine a moist rich chocolate cake with a moist light coffee cake. I tryed out a cupcake batter mold that makes a outer part of the cupcake in one flavor and the inner in the second flavor. The batter I used was thick so it was a time consuming process to pipe and push the batter thrpugh. I Swirled the batter for the last batch. The cupcakes using the mold were stunning with the surprise coffee middle. The swirled ones pretty. Both were delicious, with the seperate flavors working so well together.
