Everyone has had some sort of version of this. After grocery shopping, I really didn’t have the energy to cook anything intricate. This was quick and easy but nonetheless delicious. * it’s important not to overdo the sauce and veggies. You don’t want the water content in the vegetables to make the bread saugy.

I came up with this recipe by completely infusing the bread with the egg mixture, then slowly frying it until it's entirely cooked through.4-slice bread (3-cm thick slices) give a fluffy and delicious finish. They burn easily, so fry over low heat. Be sure to cover the pan with a lid. The time it takes to cook will vary depending on the thickness of the bread. I used thick sliced (3 cm) bread. My mother is Cajun. French toast was mama’s staple. We couldn’t pronounce it the way she did so we call them papadoos. We still call them that lol easy and comforting. The better the bread the better the papadoos. #mycookbook
