I’m honoured to be hosting a zoom cooking workshop with these easy tasty burritos!! It’s hard to have a favourite style of recipe or cuisine, well it is if your me! But this recipe and the flavours of Mexico and it’s culturally inspired different dishes are totally right up in my top ten for me!

This recipe is brilliant! You can make it straight away with out marinating, it tastes just fantastic! But allow it a few hours to marinate it’s a total game changer!! The flavours dance all over your mouth!! Endless layers of spicy, zingy Mexican fiesta ! Enjoy x

Ingredients

  1. Burritos
  2. 4chicken thighs
  3. Juice of two limes
  4. 2crushed garlic cloves
  5. 60 mlolive oil
  6. 1heaped tsp of oregano
  7. 1heaped tsp of paprika
  8. 1 tspchilli flakes
  9. 1 tspbrown sugar
  10. 1 tspsalt and pepper
  11. 1heaped tsp of cumin
  12. Guacamole
  13. 1ripe avocado diced
  14. 1 clovecrushed garlic
  15. 4ripe cherry tomatoes diced
  16. Squeezelime
  17. 1/2diced red onion
  18. Heaped tsp of salt
  19. Handfulchopped coriander
  20. Canbe pre cooked packet or your own!
  21. Salsa
  22. 10ripe cherry tomatoes diced
  23. 2 clovesgarlic crushed and diced
  24. 1/2a red onion diced
  25. Juice of a lime
  26. Handfulred onion chopped
  27. Tspsalt
  28. 1-2diced red chillis
  29. For building the burrito
  30. 4flour tortillas
  31. Cooked rice 100 grams
  32. 1/2shredded gem lettuce
  33. Handfulgrated cheese
  34. 4 tbspsour cream

Cooking Instructions

    For the chicken, place into a large bowl throw in all the spices and lime salt and pepper and mix well leave to rest !

    Once rested in a large heavy bottomed frying pan throw in the chicken on a high heat ! You actually want it to catch slightly on each side turn down the heat! Slowly cook the chicken for 15 - 20 mins until cooked through! Set aside and rest and pull apart ready for serving !

    Have fun layering up with avacado, salsa, rice, salad and cheese use your imagination!

    For the salsa and guacamole simple in two medium bowls mix all the ingredients together and let the flavours mingle ! Job done !
