These are sweet and steamed rice flour dumplings that are made from jaggery and coconut. Ukadiche Modak are made mostly during Ganesh Utsav. It's a Maharashtrian delicacy and is offered to lord Ganesha as prasadam.

Ingredients

2-3 people
  1. For outer covering
  2. 1 cup- Rice Flour
  3. 1 cup- water
  4. 1 pinchsalt
  5. 1/2 tsp - Ghee
  6. For filling
  7. 1 cup- Grated Coconut
  8. 1/2 Cup - Jaggery (Grated)
  9. 1 tsp- Cardamom powder
  10. 1 tsp- khaskhas
  11. 2 tbsp- chopped dry fruits (kaju, badam, pista and kismis)
  12. 1 tbsp- Ghee for frying the filling

    For Filling-

    Firstly in a pan heat ghee, and fry all the dry fruits (kaju, badam, pista, kismis). Once they are done take them out and keep aside to use later.

    Now in the same pan add khaskhas and fry it for half a minute then add grated coconut.

    Fry the coconut for 2-3 mins then add grated jaggery.

    Now let the jaggery melt completely then all the fried dry fruits.

    Keep mixing properly till the filling will become dry. As we need dry filling for Modak.

    Once the mixture is dry add cardamom powder and switch off the flame. Allow the mixture to cool down meanwhile prepare outer covering for the modak

    For covering -

    In a patila boil one cup of water by adding ghee and pinch of salt.

    Once the water has started boiling switch off the flame and add rice flour, bit by bit and keep mixing it with the help of spatula so that there are no lumps.

    Cover the dough and leave it for 2-3 mins.

    Now take a Katori or any flat surface katori. Grease it's surfacr and start punching the dough with the help of the katori. As the Dough is too hot to be touched by bare hands.

    After kneading dough for some time start kneading it with your hands and make a soft shiney dough.

    Heat water in a steamer on low flame and keep it ready for steaming. Grease your modak sancha with ghee and keep it ready.

    Now while the dough is slightly hot pinch a lemon ball size portion from it and put it in modak sancha.

    Press the dough through the sides of sancha so that it gets a proper modak shape.

    Now add around one tsp of coconut jaggery filling and seal the modak from below with rice flour dough. Press gently the sancha.

    Take the modak out of the sancha and keep it on a plate. Similarly make all modaks. Now modaks are ready for steaming.

    In pre heated steamer arrange all the modaks and start steaming on medium to high flame for 10-12 mins.

    Once the modaks are done take them out of the steamer and arrange them on a plate for plating.

    Nicely cooked modaks will appear shiney in appearance.
