Bara brith, sometimes known as "speckled bread, is a traditional Welsh tea bread enriched with dried fruit and made with self-raising flour. It is traditionally flavored with tea, dried fruits, and mixed spices, and is served sliced and buttered at tea time, and some people in Wales also like to eat it with a nice piece of Caerphilly cheese! My recipe is so simple it takes just a matter of minutes to make!

Ingredients

8-10 servings
  1. 300 mlstrong hot black tea (made using 3 tea bags)
  2. 250 gmixed fruit
  3. 170 gbrown sugar
  4. 225 gself-raising flour
  5. 1 1/2 tspmixed spice
  6. 1egg

Cooking Instructions

    The night before baking mix the sugar and fruit in a bowl, pour over the tea and stir to dissolve the sugar. Leave the fruit to soak overnight.

    Grease a 2lb loaf tin. Preheat the oven to 170 C fan.

    Add the flour to a large bowl with a pinch of salt, add the egg and mix, then slowly add the soaked fruit and tea a little at a time, until a thick batter is formed. Pour the mixture into the prepared tin.

    Place into the preheated oven and cook for 40-50 minutes. A knife inserted should come out clean. Leave to cool slightly in the tin, then turn out and allow to cool completely on a cooling rack.
