Every year around Christmas season with my family, we decorate these cookies. You'll get sick of decorating them by nights end because the recipe yields about 6 dozen! But they're really good cookies if I say so myself!! Thanks to my photographer hubby Mike to always make a nice picture out of something so simple!

I was given a container of coconut oil and really was not sure what to try it in first. Cookies seemed a natural choice for the flavor, adding some coconut flakes and mini chocolate chips. The coconut flavor is mild and delicate, the cookie soft and slightly chewy in the middle with slightly crisp edges. Compared to a cookie with butter, they are lighter in color and have a softer texture and delicious delicate coconut flavor..

The texture of shredded coconut in these coconut raisin cookies is chewy but the outside is baked and crunchy. Adding raisins gives it another level of fruity sweetness and flavor. Super tasty!

I have to warn you: These cookies are seriously addictive!! They’re absolutely delicious! 😋I mean, how can you go wrong with coconut, butter, and vanilla? Those ingredients are amazing on their own!The flavor is incredible, and if you dip them halfway in dark chocolate and sprinkle some coconut on top… well, you might just die of happiness!They remind me of some my grandparents used to buy for me every time they traveled to Andorra, a small country between France and Spain.
