Ingredients

  1. 1 cupseviyan/vermicelli
  2. 4 cupsmilk
  3. 1 tspghee/clarified butter
  4. 1/2 cupsugar
  5. 1/4 tspcardamom powder
  6. 2 tbspcashew nuts

Cooking Instructions

    Heat a sauce pan add 1tsp of ghee & roast vermicelli/seviyan on low flame until it turns golden brown.

    Add 4 cups of milk give it a good stir, cook for 6-7 minutes until seviyan is cooked completely.

    Now to prepare caramelised sugar, take 1/2 cup sugar in a pan on low heat keep stirring until sugar melts, stir continuously until sugar syrup turns to golden brown.

    Pour the caramelised sugar over the kheer & mix well, make sure that the kheer is super hot,else the caramelised sugar will harden.

    Keep stirring until everything is combined well and cooked.

    Roast cashew nuts in a tsp of ghee, add cashew nuts and cardamom powder mix well.

  7. 7

    Garnish with caramelised crystals and some roasted cashew nuts and your absolutely delicious kheer is ready to serve.
