Easy baked beans

I needed something quick and easy for dinner. My husband said he wanted a jacket potato. So, I decided to make my own baked beans. This is a one pot wonder and store cupboard staple. You can use any types of pulses that you’ve got the in cupboard. I used canelinni and chickpeas.

I needed something quick and easy for dinner. My husband said he wanted a jacket potato. So, I decided to make my own baked beans. This is a one pot wonder and store cupboard staple. You can use any types of pulses that you’ve got the in cupboard. I used canelinni and chickpeas.
Cooking Instructions

Heat 1 tbsp oil over a medium heat in a saucepan (I used coconut oil because I like the taste) and fry the onion for approx 5 minutes until soft, but don’t brown. Then add the garlic and fry for another minute.

Add the smoked paprika and chilli flakes and fry for 30 seconds. Then add the tinned tomatoes, herbs, beans, sugar, honey and vinegar mix together.

Season with salt and pepper to taste, bring to the boil and then simmer on a low heat with the lid on for 15 minutes.

Mix in the basil leave (optional) and Serve with whatever you fancy. We had it with baked potatoes and salad.

Well, this is technically the 4th meal with the steak and 2nd for the pork butt. Over the Easter holiday we had a cook out. My husband used the last of the sirloin to make his baked beans. I wish he’d give me the recipe lol my daughter took some pork butt and the rest went into the pot with the leftover beans. Very hearty and very delicious. A one pound bag of dried beans is too much for just the two of us so I break them in half and make two different things out of them. The first go-round which was the first time I tried making dried beans in my instant pot, was red beans and rice. Don't look, you won't find it here because even though it tasted exceptionally good there were quite a few fails during the process. So I modified the recipe and here is the new one, but we're eating this with bread instead of rice because my wife wanted to, so it has a thinner broth. So give this a try and I'm pretty sure you will enjoy it. If you use a different type of bean, most likely you will need to adjust the cooking time.
