Ginisang Tahong is a Filipino dish my grandma used to cook for us in the Philippines and also one of the recipes I rarely eat because of it's availability on stores around here in our area (US). So once I saw one from costco, I got right away and I'm excited to share this to you.

Ingredients

8-10 servings
  1. 1 tbspolive oil
  2. 1 tbspminced garlic
  3. 1/3 cupsliced onion
  4. 2 kgor 4.4 lbs of cleaned fresh mussels
  5. 1Roma tomato sliced thinly
  6. 1 tspground black pepper
  7. 1 tspsalt
  8. 1/3 cupjulienned ginger
  9. 2 tbsp.Fish Sauce
  10. 2 cupswater
  11. 2 cupsspinach (optional)

Cooking Instructions

    On a preheated pan, drizzle 1 tbsp Olive oil and sauté 1 tbsp. minced garlic (do not roast, just soften). Add in onions and sauté until translucent.

    Add tomato and ginger until softened.

    Pour in cleaned mussels and mix with the sautéed ingredients. Let it bring to a boil until some of the mussels open.

    Add 2 cups of water, fish sauce, salt and black pepper. Bring to a boil and mix again to distribute flavor.

    Simmer for 5 mins. Add in spinach and simmer for 1-2 minutes until cooked.

    Serve hot and enjoy.
