This egg curry recipe is fragrant infused with oregano and it is warm, comforting egg curry completely easy to make. Best served with naan bread, chapati or even rice.
Cooking Instructions

In a non stick pan, add 2 tablespoon of cooking oil and add the boiled eggs. Sauté them until nicely golden brown. Remove them from the pan, cut into halfs and set aside.

In the same pan, add 2 tablespoon cooking oil, add the onions, ginger and garlic. Cook on low heat until softened and fragrant.

Add the tomatoes, tomato paste,and the bay leaves.

Add the spices, 1/2 cup water and let it simmer until everything has combines and thickened.

Once thickened, add the hard boiled eggs. Allow it to simmer on low heat for a few minutes for all the flavors to combine. Very gently, scoop spoonfuls of the curry and douse over the eggs. ENJOY 🌹
