Fermented brown porridge or "Uji" or Ucuru wa mukio is an authentic Kenyan dish. Lots of people love it, however, some complain that it tastes sour. Here is a recipe that will add a sweet twist to your Uji but still keep it healthy! This may look like a small portion, but it is VERY filling! You can buy fermented porridge in any leading supermarket in Kenya. I purchased mine from Uchumi.Miss Josefina

Sweet Potato Croquettes Sweet Potato Croquettes
I got a lot of sweet potatoes as a gift, so I made them into croquettes: my children's favorite. The texture depends on what kind of sweet potatoes you use. If you don't like it flaky, adjust thickness with milk or fresh cream. I tried to keep the other ingredients to a minimum to highlight the natural taste of the sweet potatoes. Sweet Potato & Purple Yam Chakin Simple Sweet Potato Sweet Potato & Purple Yam Chakin Simple Sweet Potato
I like the coloring of purple yam, so I came up with this recipe based on that. It's great served to guests, as a snack, to help fill up a bento lunch box, or as a seasonal dish.I sometimes make these with a candied chestnut in the middle. You can also soften the sweet potatoes in the microwave. It's also good to add vanilla extract or cinnamon! You also don't have to use egg yolk or heat on the stove if you don't want to.Please taste and adjust the sweetness accordingly. You can use 5 tablespoons of white sugar instead of maple syrup with 3 tablespoons sugar if you'd prefer.
