I’m dreaming of warmer weather and lighter meals after a winter shut away indoors eating warming comfort food. Today we had these chicken breast skewers and it was lovely. Fingers crossed soon we will be brave enough to venture outside towards the BBQ!

Ingredients

2 servings
  1. 400 gdiced chicken breast
  2. 1lemon
  3. 2 tbspextra virgin olive oil
  4. 2crushed cloves garlic
  5. 1 tspdried tarragon
  6. 1/2 tspsalt
  7. Pinchblack pepper
  8. Lemon and coriander to garnish

Cooking Instructions

  1. 1

    Mix together the olive oil, lemon juice, tarragon salt and pepper. Then add the chicken and use your hands to massage to marinade into the chicken.

    Cover and chill for 2 hours.

    Thread onto skewers and bake on a foil lined tray at 190 for 10 minutes. Sprinkle with some fresh herbs and lemon wedges to serve.
