Ingredients

  1. 300 gmsbaby potatoes
  2. 1/4 th cupgreen peas
  3. 1 tbspginger paste
  4. 1 tbspcurd
  5. 2 tbsptomato puree
  6. 1 tspfennel seed powder
  7. 1 tspcoriander powder
  8. 1 tbspgramflour
  9. 1/2 tspTurmeric powder
  10. 1 tspkashmiri red chilli powder
  11. 2cardamoms
  12. 1 inchstick cinnamon
  13. 4cloves
  14. 1/2 tspcumin seeds
  15. 1/4 th tspasafoetida
  16. 1 tbspkasoori methi
  17. 1 tbspmalai
  18. 7-8cashewnuts
  19. 3 tbspmustard oil
  20. 1 tspghee
  21. as per taste salt and sugar
  22. 1 tbspcoriander chopped

Cooking Instructions

    Boil potatoes in pressure cooker upto 3 whistles.Release steam after 5 mins.They can also be steam cooked.Cool and peel outer skin of potatoes and prick them all over so that masala gets into the potatoes.

    Make a paste of cashewnuts,curd and ginger paste.Heat mustard oil in a pan or wok.Fry the potatoes till golden brown.Set aside.In the remaining oil,sprinkle cumin seeds and half crushed whole garam masala.When they crackle, sprinkle asafoetida.

    Now add the blended wet masala,dry masalas, salt and sugar to taste.Add tomato puree and green peas and fry the masala.Now add the potatoes,crushed kasoori methi and fry till oil leaves sides.Add a cup of water and cook on dum, covered in medium flame till masala coats the potatoes.Add malai or fresh cream and garam masala and mix well.Sprinkle a teaspoon of ghee.

    Garnish with chopped coriander and serve malai dum aloo with luchi,puri, roti,paratha or jeera rice in lunch or dinner.
