Gatte ki sabji is a popular gravy based dish from the Rajasthani cuisine. Gatta or gatte are gram flour roundels which are added to a curd based gravy. There are many variations of making Rajasthani gatte ki sabzi. Gatte ki sabji is a really delicious and spicy gatte ki sabji which can be relished with some roti or rice.

Ingredients

2 servings
  1. For gatte
  2. 1 cupbesan
  3. 1/4ajwain
  4. 1/4 tspTurmeric powder
  5. 1/2chilli powder
  6. 1 tspcoriander powder
  7. 1+1/2 tbsp oil
  8. 1 tbspcurd
  9. as required water
  10. 4 cupwater for boil gatte
  11. For curry
  12. 1 tbspoil
  13. Pinchhing
  14. 1bay leaf
  15. 1/2 tspcumin seeds
  16. 1/4 tspfennel seeds
  17. 1 tspkasuri methi
  18. to tasteSalt
  19. 1/2 tspchilli powder or to taste
  20. 1 tbsp coriander powder
  21. 1/4 tspturmeric powder
  22. 2chopped garlic cloves
  23. 1 inchchopped ginger
  24. 1chopped onion
  25. 1 cupwater
  26. 1 cupcurd
  27. as requiredFresh coriander for garnishing

Cooking Instructions

    Firstly, in a large bowl take 1 cup besan.

    Also add  ajwain, coriander powder turmeric, chilli powder, pinch hing, salt.

    Now add 1 and 1/2 tbsp oil and 1 tbsp curd

    Further, add as required and knead the dough for 5 minutes.

    Further, add 2 tbsp water or as required and knead the dough for 5 minutes.

    Now pinch a ball sized dough and prepare cylindrical logs.

    In a large vessel boil 4 cups of water.

    Once the water comes to a boil, drop in prepared besan gatte.

    Once the besan gatte is cooked, it starts to float.

    Drain off the gatte into a plate. Mow cut the gatte into small pieces and keep aside.

    For gatta curry

    Firstly, in a large kadai heat 2 tbsp oil and saute cumin, kasuri methi, bay leaf,  fennel and pinch hing.

    Further, add onion, ginger, garlic and saute to golden brown.

    Keeping the flame on low, add  turmeric, chilli powder, coriander powder and cumin powder.

    Saute on low flame until the spices turn aromatic.

    Furthermore, add 1 cup water. use leftover water from boiled gatte.

    Also, add 1 cup curd and stir continuously until the mixture comes to a boil.

    Now add prepare gatte and  salt. mix well.

    Vover and boil for 10 minutes, or until gatte absorbs flavour. adjust the consistency as required.

    Additionally, add garam masala and 2 tbsp coriander. mix well.

    Finally, serve gaate ki sabji with roti phulka or rice.
