For our Stage 3 #oneafrica noodles challenge I decided to go local with spinach 🤤🤤
Palm oil noodles is actually 🤤 😋
Cooking Instructions

Heat up 1/2 cup water and once it’s boiling hot, add 1/2 of of the noodle spice into the water and then add the noodles. Allow it cook till tender, turn off heat and set aside
- 2
Heat up frying pan, add palm oil, stir in Kpanla fish, pepper and onion, stir fry for about 2 minutes on low heat
- 3
Add noodles spice, then add the cooked noodles into the frying pan, mix everything together, stir fry and allow it cook for another 2 minutes

Add spinach, stir and remove from heat; then serve. 🤤😋😋

Thai-style Somen Noodles With Fish Sauce
I wanted to try another Cookpad recipe that called for pork and Chinese chives, but I only had ground pork. (Rats!) But I decided go to go through with cooking anyway, and it turned out delicious!The soup/sauce is mixed with the somen noodles so it should be very well flavored. The soup prevents the somen noodles from sticking together. You can omit the lemon juice if you like, but the flavor is much better with it added in. For 3-4 servings. Recipe by Love lunch sato


Palm nut soup/ ofe akwu
I love food lol but my favorite soup of all, is this beautiful palm nut soup. The flavor of the palm nut is indescribable and delicious 😋! The palm tree is just amazing that you can get wine from it and it’s no low class wine either! Palm oil is a must for a lot of Igbo dishes and of course the palm nut soup 🍜 is time consuming but so worth it !


"Thai" Noodles with Shrimp
I've actually never had Thai style noodles, but I have been looking around at different recipes for them. This recipe is far from authenic...I just tasted the sauce as I whisked, kept adding ingredients until I was happy with it and this is what I ended up with. I made this one more veggie heavy, rather than noodle heavy, at least to give the impression it is a tad healthier 😊. I found in restaurants it is mostly noodles, because they are cheaper I suppose.Here is a note about this dish. Required, soy sauce and sesame oil. These two are the major flavor factors.Next is the glass noodles, which offer a slightly chewy texture which is hard to duplicate. But if only rice noodles or regular spaghetti noodles are available, go ahead and use that. The texture will be different, but the flavors should be good still.Sugar and garlic round out the flavors of this dishs basic flavors.Meat is actually optional, tofu can be used also, as well as chicken, pork, etc., Or none at all.The veggies are completely up to you. But the onions are pretty much a staple.The egg is usually for looks, and some only use the yolk for that bright yellow splash of color.This is typically NOT spicy, so it works for a lot of people. It can be a main course, or a side dish.The choice is yours.
