Thai-style Somen Noodles With Fish Sauce

I wanted to try another Cookpad recipe that called for pork and Chinese chives, but I only had ground pork. (Rats!) But I decided go to go through with cooking anyway, and it turned out delicious!
The soup/sauce is mixed with the somen noodles so it should be very well flavored. The soup prevents the somen noodles from sticking together. You can omit the lemon juice if you like, but the flavor is much better with it added in. For 3-4 servings. Recipe by Love lunch sato

Cooking Instructions
- 1
Make the soup by mixing together 500 ml of water and 1 tablespoon of chicken soup stock granules. The soup can be warm or soft, whichever you prefer.
- 2
Cut the chives into 4 to 5 cm long pieces, and finely chop the garlic and ginger.
- 3
Heat some sesame oil in a frying pan and stir fry the garlic and ginger.
- 4
Add the ground meat and stir fry. When it's cooked, add the garlic, mix quickly and add the fish sauce. Drizzle the soy sauce around the surface of the pan and mix in.
- 5
Cook the somen noodles, drain and rinse and wash well under running water to remove any surface stickiness. Drain well.
- 6
Arrange the somen noodles on a plate, top with the stir fry and pour plenty of the sauce from Step 1.
- 7
Add the lemon juice and it's done.

I wanted to cook with nutritious komatsuna greens in an Asian fusion dish.☆ In Step 3, drain the somen noodles well.☆ In Steps 5 and 6, do not take too much time when cooking or the dish would become watery.☆ In Step 6, after adding the komatsuna, just mix lightly as it will cook in residual heat.☆ Squeeze a lemon just before serving if you prefer. Dipped Somen Noodles In Sesame Dipping Sauce Dipped Somen Noodles In Sesame Dipping Sauce
I was bored with regular somen noodles, but store-bought mentsuyu is expensive and I only had a little of it, so I tried making this dipping sauce. The mentsuyu, ra-yu, sesame seed, ginger and green onion amounts are an approximate. Adjust the amount to your liking. Try with salted sliced cucumber, tomatoes, myoga ginger, shiso leaves, etc. to make a hearty noodles dish! Somen Noodles with Yuzu Pepper Sauce Somen Noodles with Yuzu Pepper Sauce
My husband gets home late, so I wanted to come up with a noodle recipe that can be made in advance and is light on the stomach. Now this recipe is a family favorite. I think you could use pasta too.If you don't have sesame paste, use ground sesame seeds. After chilling the sauce, mix it up before putting it in the serving bowl. The color may look a bit pale in the main photo, but as long as you use the right amount of ingredients it will be properly flavored. Make sure to chill everything well before serving. Ice cold, it tastes so much better than when it's just lukewarm. Cook the noodles so that they're on the firm side before draining, rinsing well in cold water and draining again. For 1 serving.
