This is a weekend favourite combo in our house. The Halwai Style Aloo Sabzi is a popular traditional brunch combo in households in UP.
Cooking Instructions

Wash & pressure cook the potatoes until soft. Allow them to cool, peel & set aside.

Heat the oil / ghee in a cooking pan, add the cumin, fennel & fenugreek seeds. Add the asafoetida. Allow it crackle for a few seconds.

Add the kasuri methi, sliced ginger & green chillies, saute briskly.

Add the turmeric, cumin, coriander & red chilli powders. Saute briskly

Immediately add 2-3 tbsp water, mix well & cook until the masala turns dry.

Add the ready fresh tomato puree, mix & cook.

Add salt to taste, a little sugar, cover & cook until dry

Cube the cooled potatoes, lightly crush them and add them to the tomato masala.

Mix well, add half of the coriander leaves, add water, simmer for about 20 mins on low heat.

Top with the remaining fresh coriander, serve with Raita & Pickle on the side.
