Ingredients

4-6 servings
  1. 7-8Potatoes
  2. 1 inchGinger piece, thinly sliced into long strips
  3. 1-2Green Chillies, finely chopped
  4. 6-8Tomatoes, pureed
  5. 1/2 tspTurmeric Powder
  6. 1/4 tspRed Chilli Powder
  7. 3/4 tspCumin Powder
  8. 1/2 tspCoriander Powder
  9. 3/4 tspAmchoor Powder
  10. 1/4 tspAsafoetida Powder
  11. 1/2 tspFennel Seeds
  12. 3/4 tspCumin Seeds
  13. 1/4 tspFenugreek / Methi Seeds
  14. 3/4 tspKasuri Methi, lightly crushed
  15. 2 tspGhee / Mustard Oil
  16. 1/4 tspSugar
  17. Salt to taste
  18. Water, as required
  19. 2-3 tbspFresh Coriander Leaves, finely chopped

Cooking Instructions

  1. 1

    Wash & pressure cook the potatoes until soft. Allow them to cool, peel & set aside.

    Heat the oil / ghee in a cooking pan, add the cumin, fennel & fenugreek seeds. Add the asafoetida. Allow it crackle for a few seconds.

    Add the kasuri methi, sliced ginger & green chillies, saute briskly.

    Add the turmeric, cumin, coriander & red chilli powders. Saute briskly

  5. 5

    Immediately add 2-3 tbsp water, mix well & cook until the masala turns dry.

    Add the ready fresh tomato puree, mix & cook.

    Add salt to taste, a little sugar, cover & cook until dry

  8. 8

    Cube the cooled potatoes, lightly crush them and add them to the tomato masala.

  9. 9

    Mix well, add half of the coriander leaves, add water, simmer for about 20 mins on low heat.

  10. 10

    Top with the remaining fresh coriander, serve with Raita & Pickle on the side.
