Ingredients

  1. 500 gmsPaneer
  2. 1 TspKashmiri LAL Mirch powder
  3. 1/4 tspTurmeric powder
  4. 1/4 tspSalt or as per taste
  5. as requiredOil to fry (use same oil to cook gravy as per need)
  6. For Gravy
  7. 2Whole Dry Chillies
  8. 1/2 TspCummin seeds
  9. 1/4 tspBlack Peppercorns
  10. 2Cloves
  11. 3Onion chopped
  12. as per needPuree of two Tomatoes
  13. 1 TspCoriander Powder
  14. 1 TspKashmiri LAL Mirch powder
  15. 1/4 tspTurmeric powder
  16. as per tasteSalt
  17. 1small Ginger
  18. 5-6Garlic cloves
  19. 1Fresh Chilli
  20. Dhaba Masala
  21. 1 TbspCummin seeds
  22. 2 TbspsCoriander seeds
  23. 1/2 TbspBlack Peppercorns
  24. 2Black Cardamoms
  25. 2Green Cardamoms
  26. 4-5Cloves
  27. 1Small Cinnamon stick

Cooking Instructions

30-40 minutes

    Dry roast the whole masalas under Dhaba Masala and cool it, then grind it into powder. In the same mixer grinder jar make the tomato puree too. Make a rough paste of ginger garlic and chillies in Mortar and pestle or mixer grinder if mortar and pestle not available or in grinding stone, no need to make it into fine paste, as it's Dhaba style.

    Sprinkle Salt, Chilli powder and turmeric powder and fry the paneer cubes. Keep it aside. In the same oil as needed add the whole dry Chilli, Cummin seeds, Black Peppercorns and cloves. Once everything crackles, add the onion and saute it till it becomes pink and translucent, add the ginger garlic chilli paste, saute it for few minutes.

    Add tomato puree and cook till tomatoes are well cooked, add coriander powder, turmeric and Kashmiri chilli powder and cook further for few more minutes for the spices raw aroma to go. Add little water if needed.

    Add the Dhaba Masala powder and cook for few more minutes. When oil starts seperating,add the fried paneer and mix well, the Masala should be sticking to the paneer as it's Paneer Masala, so no need to add water and make a thin consistency gravy.

    Serve hot with Roti, Parathas etc.
