Sattu Paratha is a family member of Indian breads, most popular in the Bihar region of India where it is a staple food. Sattu is full of fibre, and essential nutrients like protein thus making this one a healthy dish that can be served for breakfast, lunch and dinner as well.
Sattu ka paratha is an immensely popular recipe of paratha in North India. It is a pure Bihari delicacy and one of the most frequently prepared breakfast or lunch in Bihar, Uttar Pradesh and few parts of Bengal. This healthy stuffed paratha is prepared with spicy and flavoured Sattu stuffing. The stuffing is inserted into the wheat dough portions and roll out to flat parathas. Sattu ka paratha is shallow fried in pan with little oil. It is mostly relished with yogurt, pickles or mild curries or aloo subjj.

Ingredients

  1. 🍪 For Paratha Dough :--
  2. 3 cupwheat flour
  3. 1/2 tspkalonji
  4. 1 tspcarom seeds (ajwain)
  5. 1 tbspoil for moin
  6. Salt as per taste
  7. Water as per required
  8. 🍪 For Stuffing :--
  9. 1.5 cupsattu flour (roasted black gram flour)
  10. 1 tspkalonji
  11. 1 tspcarom seeds (crushed by hand)
  12. 1finely chopped small size onion
  13. 2 tbspfinely chopped garlic
  14. 2 tbspfinely chopped ginger
  15. 2finely chopped green chilly
  16. Salt as per taste
  17. 2 tbsppickle masala + 2 tbsp pickle oil
  18. 1lemon juice
  19. 2 tbspfinely chopped green coriander leaves
  20. Ghee Or butter for frying Paratha
  21. 👉 For Garnishing :--
  22. leavesButter, pickle masala, green coriander

Cooking Instructions

    First we will make paratha dough. For this, in a large bowl, add wheat flour from the sieve and mix it with kalonji, hand-crushed carom seeds and salt. Now add a little bit of water as required and knead a medium soft dough. Then cover the dough with a kitchen towel and let it rest for 10 minutes.

    Now we will make paratha stuffing. For this, add roasted black chickpeas in the mixer jar, grind them and take fine powder. So that the flour of Sattu is ready.

    Now add the flour of this substance in a big plate and add kalonji, hand crushed carom seeds, chopped onion, chopped garlic, chopped ginger, chopped green chillies, salt to taste, pickle masala + pickle oil, Add lemon juice and green coriander leaves and mix well.

    Now our paratha dough has also rested for 10 minutes. So we'll take a little bit of it again. Now make small loaves of this. Take a loaf, press it, make a ball-like shape by hand, fill it with stuffing of sattu, press it a little bit, pack the seal, spread it a little by hand, lightly weave paratha in the dry flour. Keep the paratha of medium thickness.

    Now heat a frying pan, add ghee, add paratha and fry on medium flame. Prepare all the parathas in this way.

    Now our very tasty Bihari Sattu Paratha is ready to serve. Serve this paratha hot, garnished with butter, pickle masala and green coriander leaves. Serve this paratha with masala curd, pickle or aloo subji.
