Grate the boiled potatoes. Add the chopped green chilies and ginger paste.

Mix in all the dry spices. Add the chopped onions and cilantro.

Mix the filling thoroughly.

In a bowl, combine the flour, salt, and carom seeds. Add water and knead to make a soft dough. Divide into portions, flatten each, spread a little ghee, fill with the potato mixture, and roll out into parathas.

Place the paratha on a hot skillet. Cook both sides with ghee until golden brown.

Top the parathas with homemade butter and serve hot with yogurt and mango chutney.
