Firstly, take wheat flour in a bowl, add salt, oil and water. Mix and knead a soft dough. Let it rest for 10 minutes.

Meanwhile, take mashed potatoes in a big mixing bowl. Add in the turmeric powder, red chilli powder, asafoetida, crushed coriander seeds, fennel seeds, carom seeds, garam masala powder, green chillies, mango powder, grated ginger, chopped coriander and salt. Mix very well. Stuffing is ready.

Divide the dough into 8 equal portions and make round balls.

Take a dough ball and dust some wheat flour.

Roll it like a poori, stuff the stuffing.

Roll slightly thick paratha.

Place the paratha over heated tawa and cook it till golden brown by applying oil or ghee to both sides.

Serve hot with pickle, chutney, yoghurt or raita.
