Spanish Zucchini Tortilla Spanish Zucchini Tortilla
The spanish tortilla, unlike the omelette or quiche, is cooked completely on the stove, has soft, juicy, spongy and tasty consistency. A spanish tortilla can have vegetables, herbs/spices added to achieve different flavor profiles, in regular omelettes or quiches they are added in lesser quantities.I hope you like the recipe and try it at home 🙂 Rosanas Ideas -

I usually make Spanish potato omelette by sautéing the potatoes in oil, but this time I was short on time and decided to make a healthier, quicker version by cooking the potatoes in the microwave without oil. Bea MTranslated from Cookpad Spain -
Tortilla Española (Spanish Omelet) Tortilla Española (Spanish Omelet)
I had this a few times while travelling in Spain, so when I got home I wanted to learn how to make it. All of the recipes I could find have about the same ingredients (it's a very basic recipe), but I wanted to learn more about the technique to make it just like they do in Spain. I'm posting this here hoping that some of you cooking pros will chime in with some advice on how to make the perfect tortilla! KevinInTheKitchen -

Eggplant, Potato, and Onion Tortilla Eggplant, Potato, and Onion Tortilla
In Catalonia, it's called Dijous Gras; in the Balearic Islands, Dijous Llarder; and elsewhere, Jueves Lardero. The word 'lardero' comes from the Latin 'lardarius,' meaning 'pork butcher.'This day is also known in many places as 'Tortilla Day.' It marks the start of Carnival festivities and signals that there's one week until Ash Wednesday, which begins Lent—meaning 40 days until Easter. What's the connection between this day and tortillas? There are many theories, but the most common is that, in the past, people made tortillas with flour and pork fat on this day and would go out to the countryside to eat them.Nowadays, flour and fat have been replaced by eggs, which is why it's traditional to bring a tortilla sandwich to school or work.Of course, each region celebrates this day differently, with a variety of foods and traditions.Basically, it's a day spent outdoors where food plays a big role. The celebration is especially popular in the eastern regions of the Iberian Peninsula, where there's a saying: 'Jueves lardero, longaniza en el puchero' (On Lardero Thursday, sausage in the pot). josevillaltaTranslated from Cookpad Spain -

Tortilla De Patatas (Spanish Omelette) Tortilla De Patatas (Spanish Omelette)
This is one of the most classic (and easiest) Spanish recipes. Every family does it in its own way, so this is my mom's style (the best, of course!). It makes a smart use of onion to sweeten it without feeling its crunchiness, plus some other tricks to make it look great.Note: as this is a big omelette, it usually cooks faster and easier on gas stoves. If you're using an electric or induction stove it might require around 30 minutes of extra heating for steps 9 to 14. Chema
