Gluten-free maple blueberry muffins

Ingredients

1 hour
10-12 muffins
  1. 1egg
  2. 1/3cup veg oil
  3. 1/3cup sugar
  4. 1tsp maple extract
  5. 1 1/4cup milk or water
  6. 1 1/2cups oat flour or blended oats
  7. 3/4cup gluten-free flour
  8. 1tsp salt
  9. 2tsp baking powder
  10. 3/4cup frozen or dried blueberries

Cooking Instructions

  1. 1

    Combine ingredients in a mixing bowl and whisk together. If batter is runny or thick, adjust until there is a pancake batter consistency.

    Pour batter into a greased or lined muffin tin and bake at 375F / 200C for 17-20 minutes

    Allow to cool for 5-10 minutes and enjoy!
