Ingredients

  1. 3eggs
  2. 1 teaspoonvanilla extract
  3. 325 gall purpose flour
  4. 2 teaspoonbaking powder
  5. 100 gbrown muscovado sugar
  6. 2 teaspoonsmixed spice
  7. 125 gsoft butter (i used salted butter)
  8. 1rounded tablespoon jam (i used quince jam)
  9. 200 gdried fruit (sultanas, raisins, date, cranberries)
  10. Handfulcrushed walnuts or pecans
  11. 100 mlmilk
  12. Optional:
  13. 1 teaspoonessential natural red food colour

Cooking Instructions

    Start with soaking the dried fruits in 100ml milk for extra moist (10-15 minutes)

    Preheat the over to 170C

  3. 3

    Mix all the dry ingredients: flour, baking powder, sugar and mixed spice

  4. 4

    Add the wet ingredients: egg, vanilla extract, butter, jam, food colour, and the milk in which the dried fruits are soaked. (Without the fruits)

    I used this homemade quince jam that I brought from a Lebanese village. My favourite!!

    Beat the ingredients together but don’t overdo it.

    Now add the dried fruits and stir in gently using a spoon

    Put the mixture in a greased tin/liner (I used tahini instead of butter or baking paper which works great)

    Bake the cake for 1h 15 minutes - test with a toothpick. When it comes out clean the cake is done. If not, return to the oven for 10 minutes and repeat.

    Once done, leave the cake in the tin for 10 minutes to cool down.
