Quinoa mini muffins | baby food and adult version 🥰

This was a HUGE success in our house, my baby absolutely loved it, played with the mini muffins, opened them and tasted them on his own. Great sensory food and a beautiful start to introduce a new taste and texture like quinoa.
Then I kept half on the side and added salt for us adults! The perfect mini breakfast before our morning walk. And let me tell you this will make the best road trip snack now for the holidays ⚡️ Hope you enjoy it ☺️

Cooking Instructions

Start by turning oven on 200 celsius on fan. In the meantime cut sweet potato and steam it until soft.

In a pan cook quinoa by covering it with water and let it simmer for 15/18 min. If you need to add more water just top it and let cook. Once the “curly white hair” comes out of quinoa seed this means it is ready.

In a bowl add quinoa, cheese, eggs and sweet potato. Mix well with a fork.

In a mini muffin dish, spray the holes with cooking spray and scoop in the quinoa mix.

Cook for 16 min and you and your baby enjoy it together 💪🏽🙌🏽❤️

I originally wanted to make this using chestnuts, but I couldn't get my hands on the time-saving peeled frozen chestnuts either because it was too soon seasonally or the store didn't have them...They are expensive even if they were in stock...Also they happened to have thick and nicely-shaped sweet potatoes for a cheap price at the nearby shop I also had just the perfect amount of pancake mix leftover, so I tried making these.I really have none, but sweet potatoes and chestnuts. I think they both have their differing sweetness and water content. I think dispersing the finished product individually is also fun. Aside from that, this is really just my preference, but I like to take the mashed bits from the bowl along with the mostly mashed bit, then mash them up and finally scatter them on top of and in the cream since it produces a nice texture. Even if it's fine, it produces the scent and flavor of the sweet potatoes. Roughly speaking, it's just like you are baking and eating a sweet potato... For about 6.
