1st Make the brine

Keep a thick vessel, add water, salt, sugar, bay leaf, and other spices, let it boil, (because we like more spicy I add riped chilles)

Remive the vessel, Place the egg in brine, if it is float, then the salt is enough. If not then you ve to add more salt. Remove the egg. Let the brine cool completely

Wash the meat thoroughly in running water, tie it tightly with twine and place it in airtight container, add the brine, keep a heavy bowl on the top of the meat, close it tightly and keep it in fridge for 10days

After 10 days, Take the meat, wash in running water throughly,

Take the meat, wash throughly in running water.

Place the meat in pressure cooker, add 1cup of water, and cook, after the first whistle, reduce flame, and cook for 30min

Once steam out completely, take the meat, untie twine, slice the the meat with sharp knife,

Grind, 1tsp pepper corn, 2 red chilli, coarsely, add 1tbs garlic paste, and apply on the slices

Keep a heavy skillet, add 4tbs olive oil, and fry the meat just 5min, then turn, and cook for 3min

Boil, some baby potatoes, and other vegetables serve with meat. You can serve with stir fry vegetables also

Take the broth, boil until thick add some sweet cherry sauce for the dip

Serve the meat with vegetables, dip and preserved vegetables
