Ingredients

Preparation time-15 mins, Cooking time-2hrs

  1. For Biryani Rice
  2. 1 kgBasmati
  3. 1star anise
  4. 1bay leaf
  5. 1 cinnamon stick
  6. 2-3green cardamoms
  7. 3-4black peppercorns
  8. 1-2Black Cardamom
  9. 1mace
  10. 1 tspcumin seeds
  11. 1 Tbspghee
  12. as per taste Salt
  13. For Chicken marination
  14. 1 kgChicken on bones
  15. 2 Tbspginger-garlic paste
  16. 1 tspgreen chilli paste
  17. 1 tspred chilli powder
  18. 1/2 tspturmeric powder
  19. 1/2 cupfried onions
  20. 2 TbspBiryani masala
  21. 1 sprigmint leaves chopped
  22. 1 sprigcoriander leaves chopped
  23. 2 Tbspghee
  24. 400 gmsyogurt
  25. as per taste Salt

Cooking Instructions

Preparation time-15 mins, Cooking time-2hrs

    Wash the rice 3-4 times and soak the rice in water 40 mins

    In a heavy bottomed vessel boil water and add ghee, mace, cinnamon stick, black cardamoms, green cardamoms, black peppercorns, star anise, coriander leaves, mint leaves, bay leaf, cumin seeds.

    Add rice and on medium flame cook to 90%, drain and spread on a plate to cool.

    To marinate the chicken - in a bowl add the chicken and red chilli powder, turmeric powder, green chilli paste, ginger-garlic paste, coriander leaves, mint leaves, ghee, yoghurt, Biryani masala, salt. Mix well

    Cooking the Biryani - in a heavy bottomed vessel, add 2 Tbsp ghee and add the marinated chicken. On medium flame cook the chicken until oil leaves surface and bubbles are seen. Take out the chicken and set aside

    In the same vessel add one layer of rice, 1 Tbsp fried onions, few mint leaves, few coriander leaves, 2 Tbsp of saffron infused milk, one layer of cooked chicken pieces, repeat the layer until it reaches top of the vessel

    In a small bowl add a heated charcoal with 1 tsp ghee and put on the biryani vessel, cover and for 5 mins wait to get a smoky effect, set aside the charcoal

    Add some more ghee, coriander leaves, mint leaves and saffron infused milk and seal the cover with wheat dough all around it.

    Place it on Dum for 30 mins

    Set aside the cover.

    To plate gently take the rice first and then the chicken. Serve with Raita and enjoy
