Chinese food is loved by everyone. Chinese fusion food available on streets tastes awesome. Veg. chowmin, hakka noodles and schezwan noodles are most popular types of noodles. I have prepared schezwan noodles which is a bit spicy type of noodles prepared with veggies and schezwan sauce. It tastes great served with munchurian gravy. It can be a great lunchbox meal too!

Veg Schezwan Noodles

Ingredients

  1. 150 gramhakka noodles
  2. 3 tbspoil
  3. 1 tbspfinely chopped garlic
  4. 1 tbspfinely chopped ginger
  5. 1/2 tbspfinely chopped green chillies
  6. 1onion sliced
  7. 1capsicum julienne
  8. 1carrot julienne
  9. 1 cupcabbage shredded
  10. 8green beans thin strips
  11. 1/4 tspblack pepper powder
  12. 3 tbspschezwan sauce
  13. 1 tbspsoy sauce
  14. 1 tspvinegar
  15. Salt to taste
  16. 1/4 cupspring onion finely chopped

Cooking Instructions

    In a big pot, add 6 - 8 cups water and put it on high heat. When it starts boiling, add some salt and oil to it and add noodles to it. Now boil noodles for 5 to 7 minutes until they are just done. Keep stirring occasionally. Make sure that noodles are not boiled too much otherwise it will not taste good. When it is done, strain the water and take it out in a colander and give it a wash of cold water. Add a little bit of oil into it and mix it well so that it does not stick to each other.

    While noodles are boiling, wash and prepare all the vegetables.

    Heat oil in a pan and add chopped garlic, ginger and green chilli. Saute it until garlic is light brown in colour. Now add all the veggies and stir fry them for 2 minutes on high heat. Now add salt, pepper, schezwan sauce, soy sauce and vinegar. Mix everything well.

    Add noodles to the vegetables and mix it nicely. Cook it on high heat for 2 to 3 minutes then add chopped spring onion to it and turn off the heat.

    Serve veg schezwan noodles with any vegetarian or non vegetarian chinese style gravy.
