Ingredients

  1. 600 gramsFull chicken of
  2. 6-8leg pieces of chicken
  3. to taste Salt
  4. as required Juice of 2 lime
  5. 2 tbspginger paste
  6. 2 tbspgarlic paste
  7. 1 tbspred chilli Powder or to taste
  8. 1 tspblack pepper powder
  9. 1 tspcumin powder
  10. 2 tbsptikka masala
  11. 2 pinchTandoori or orange food colour(optional)
  12. 3-4 tbspoil
  13. 1 tspgaram masala powder
  14. 2sliced tomatoes for salad
  15. 1sliced onion for salad
  16. 1-2lemon
  17. 1 bowlmix salad
  18. 2-3sliced cucumber
  19. 2sliced carrot for salad
  20. 2-3green chillies for salad (optional)

Cooking Instructions

    Thoroughly wash and clean all the chicken pieces and full chicken and pat dry them. Then take the whole chicken and make 4 deep gashes on each side of the breast and 3 gashes on each side of the legs. Then take juice of lime add 1/2 tsp salt to it and gently massage on all the chicken pieces and full chicken and keep it aside for 15-20 minutes. By this step all the smell of chicken will go away and the meat will become quiet tender.

    Now let's prepare the spice mix for that in a bowl add all the spices along with ginger and garlic paste and juice of a lime along with oil and mix very well. Make sure the spice mix is well incorporated so that when applied to the chicken will give delicious flavour. Now take the full chicken and chicken pieces and discard all the water that comes out while marinating. Then apply the spice mix on all the chicken rubbing and massaging it gently so that each and every part get coated very well.

    Marinate it for at least 2 hours or overnight if you have time in hand. I always prefer overnight marination so that the chicken become soft, moist and tender after cooking. I will grill the leg pieces on red hot charcoal and grill the full chicken in the oven. Grill it at 180°C for 30-35 minutes flipping in between 2-3 times or until completely done. For the charcoal cook chicken red hot the charcoals then put the chicken pieces on it andflipping it few time cook on both sides until done.

    It takes some where about 15-20 minutes. Serve hot with the choice of your bread or rice with the choice of your salad. You can grill chicken fillets also with the same recipe on the grill pan and it will be done in 15 minutes. Serve it with chutney or any sauces and mayonnaise.
