Steps
- 1
Mix the spices marked with ☆ in a bowl and set aside.
- 2
Cut the Yukon Gold (or red) potatoes and bell peppers into bite-sized pieces and place them in the slow cooker first.
- 3
Add the mixture of chicken bouillon and water, or chicken stock (broth).
- 4
Add the lime juice.
- 5
Rub the chicken thighs with the mixed spices using your hands.
- 6
Heat oil in a frying pan and sear both sides of the chicken until browned. It's okay if the inside isn't fully cooked, as it will finish cooking in the slow cooker.
- 7
Place the seared chicken on top of the potatoes and bell peppers in the slow cooker.
- 8
Cook in the slow cooker on high for about 3 hours or on low for about 5 hours until done!
