Ingredients

10 - 15 minutes
2-3 servings
  1. 2 cupflattened rice
  2. 2medium Onion
  3. 1small Capsicum
  4. 1small Carrot
  5. 3green chilli
  6. 1 tbspcrushed Ginger
  7. 1/2 tspMustard seeds
  8. 8-10Curry leaves
  9. 2 tbspRoasted Peanuts
  10. 2 tbspOil
  11. 1big pinch turmeric (optional)
  12. 1 tspSugar
  13. 1/2 Lemon

Cooking Instructions

    Chop all veggies and keep aside.

    Wash flattened rice and keep in colander to drain water.

  3. 3

    In moderately heated pan add oil, add mustard seeds and allow to sizzle, add curry leaves + ginger and sauté for few seconds. Then add chopped onion and sauté till translucent, then add all veggies and stir fry 3-4 minutes, veggies should turn soft.

    Add turmeric and sauté for 1-2 minutes.

    Add soaked flattened rice + sugar + salt and mix gently. Simmer and cook for 4-5 minutes. Lastly squeeze lemon juice + peanuts and mix well.

    Now Poha is done, garnish with peanuts, Serve with ginger tea and enjoy this yummy tea time combo.
