Cooking Instructions

Put the Cauliflower and Broccoli in a steamer pan.
Cook until softened. - 2
Finely slice the onion and chop the bacon into small pieces. Add to a large frying pan with the butter and fry on medium heat until browned.

Chop the Spinach and add to the pan, continue to cook until all wilted.

Remove the Broccoli when cooked but not too soft and chop into smaller pieces.
Add to the frying pan with bacon/onion/spinach mix.
Remove from heat. - 5
Remove the Cauliflower when cooked but not soggy!
Place in a mixing bowl.
Add Dijon mustard, a good grinding of Black Pepper and 50g Mature Cheddar. - 6
Using a hand blender, whizz up the Cauliflower to a puree/mash.

Mix in the other vegetables, check saltiness and add some if required.
Put into an oven safe dish, smoothing the surface. - 8
Top with the remaining cheeses and bake in a hot oven (200c) for 20 mins.
For further browning, finish under the grill to crisp. - 9
Enjoy alone or as a side dish.
Instead of Bacon, a tin of Tuna will go nicely!!
Add in with the cooked ingredients before mixing.
