Oaty banana bites

I don’t really know what to call these. They’re soft like cake but oaty like a flapjack. Whatever they are, they’re a great alternative to banana bread for using up your over ripe bananas. They couldn’t be easier to make and using only the natural sweetness of the bananas and dates, they’re fairly healthy too. I got the recipe from hedgecombers.com but adapted the quantities slightly to use up ingredients, rather than being left with annoyingly small quantities.

Cooking Instructions

Mash the bananas in a bowl. Add the chopped dates, oats, melted butter and salt. Mix everything together and set aside for 15 minutes so that everything soaks together.

Meanwhile preheat the oven to 180 degrees c.

After 15 mins transfer the mixture to a baking tray. Spread it out to about 1.5 cms thick and bake for 22-25 mins until golden. Set aside to cool. Cut into squares and enjoy.

I've tried making lots of different banana cakes, but if I mixed in lots of bananas, the cake would always be too heavy. I tried thinking up a recipe where I could still use lots of bananas but result in a light yet satisfying cake,. I was aiming for something between a genoise and a pound cake. You can definitely taste the banana, but this cake is still soft and moist and has the best balance of any cake I've made until now.I recommend using fully ripened bananas. If the bananas aren't fully ripe then increase the amount of sugar. Even with ripe bananas, this is not very sweet. I also recommend using unsalted butter. You have to use "Plantain Bananas" to get the best result. I have never tried this recipe with any other bananas. So I don't know about it. Use ripe bananas. I've seen people adding sugar to the batter along with crushed cardamom. I like it better this way. Added a pinch of turmeric for the colour 😁 Pen Friend
