Ingredients

4 servings
  1. 1 cuprava
  2. 1/2 cupsour curd
  3. 1chopped onion
  4. 1chopped tomato
  5. 1/4 cupcapsicum
  6. 1/4 cupgrated carrot
  7. as required Finely chopped green chillies
  8. 2 tbspchopped coriander
  9. as per tasteSalt
  10. 1/4 tspbaking soda
  11. 1/2 cupWater or as per needed
  12. as requiredOil for greasing
  13. For tempering
  14. 1 tbspOil
  15. as required Some curry leaves
  16. 1/4 tspmustard seeds

Cooking Instructions

    In a mixing bowl rava,water and curd mix it well and keep aside for 15 minutes.

    After 15 Mins add chilli, salt, capsicum, carrots, tomatoes, and onions. Mix well. Add more water to the batter to make it at pouring consistency

    In a tempering bowl, add some vegetable oil and heat.

  4. 4

    Add mustard seeds and once they start popping add curry leaves.

    Add the baking soda and mix it briskly till you get the cottony texture.

    Hest a non-stick Tawa over medium flame. Apply oil on the surface.

    Drizzle some oil around the edges of the uttapam.

    Cook until the color of top surface changes from white to off white and bottom side turns light brown for about 1-2 minutes.

    Flip it gently and cook on the other side.

     Flip it again and cook for 20-30 seconds and transfer it to a plate.

    Serve with coriander coconut chutney.
