Thai Mango Salad

When mango is in season and your fridge is always filled it up with this yellow monster… then you always think of making something with it… 😄 . Last night I was really craved for Thai food, which we used to have in our working day lunch time in Malaysia. So I made White rice, Thai minced beef, chili in soya and thai mango salad. Perfect combo for lunch or dinner.

Ingredients

  1. 2Mangoes (cut into thick sticks)
  2. 1/2capsicum (thick sticks)
  3. 1small onion (thin slices)
  4. Green spring onion chopped
  5. 1/2carrot (thick sticks blanched)
  6. Dressing
  7. 4 tbsvinegar
  8. 1green chilli chopped
  9. Dried chili
  10. Sesame seeds
  11. 2sugar

Cooking Instructions

    Cut Mangoes, capsicum, onions and carrots. Keep aside

    Take a pan and pour vinegar, put cut chilies and sugar.

    Add sesame seeds and simmer it. Pour the dressing on Mango and vegetables.

    Mix it well.

    Put in a freezer or fridge to make it cold.

    Serve with any dish. I served with Thai basil beef minced and white rice.
