I been very pre occupiers over the past few weeks with house moving and as a result of my extensive busy lifestyle, that has sadly decreased my time in the kitchen. In the last few days, I have opted for very simple and easy go-to meals such as this kale salad.

I been very pre occupiers over the past few weeks with house moving and as a result of my extensive busy lifestyle, that has sadly decreased my time in the kitchen. In the last few days, I have opted for very simple and easy go-to meals such as this kale salad.

Ingredients

  1. 6large fresh kale leaves washed and cut into thin slices
  2. 1large carrot grated
  3. 20 kgred cabbage washed and cut into thin slices
  4. 3 piecespicy Italian sausages (optional)
  5. Seasonings
  6. 1 tea spoonlemon juice
  7. 3tab spoon basmati vinegar
  8. 1tab spoon cocounut oil(optional)

Cooking Instructions

  1. 1

    Pre heat the oven at 160 degrees.

    Cut sausages into large pieces. Add seasonings(I used dried rosemary leaves, salt and pepper) place in the oven and cook.

    In a medium size bowl, combine together salad vegetables, add vinegar, oil, lemon juice and gently fold together.

  4. 4

    Once the sausages are cooked, remove from heat and allow to cool.

  5. 5

    Add sausages to salad bowl and gently toss together until well combined.

  6. 6

    Serve as a side dish or by self.
