Feeling sleepy? Worry not, this strong Karak Chai is going to wake you up in an instant.
And then you’ll actually wake up every morning looking forward to having Karak Chai at home. And soon you’ll be so in love with karak chai, you won’t be able to function without it. Okay just kidding, it’s not that addictive. But it kinda is. Shhh, don’t tell anyone.

Milk & Black Tea Kanten Milk & Black Tea Kanten
"Kanten (agar)" is a popular ingredient for Wagashi, especially in summer. It looks like jelly but it's made from seaweeds. So it isn't necessary to worry about a protease and we can put any fresh fruits in it! It gets glass like transparency but with a lot of sugar.I made a check pattern Wagashi with less sugar Kanten blocks of milk and sweet ones of Earl Grey (black tea). It's lovely marriage! Easy and Fluffy Black Tea Mousse Easy and Fluffy Black Tea Mousse
The Theme of the Week this week was "Sweets Using Black Tea." I remembered that I made "Fluffy and Creamy Coffee Mousse", but I hadn't made a black tea version. It has different ingredients and uses a different process, so I uploaded this recipe here.In Step 4, if it is too thick after chilling in the fridge, leave it at room temperature for a while and whisk gently until it has a thick consistency. You can also add spices that you like. I recommend chai tea flavouring. Of course, you can use loose leaves instead of a tea bag. Add 2-3 g of tea leaves to the saucepan, simmer then strain. Recipe by Sabumochi cookpad.japan -

Basic Chai Basic Chai
I went to India for a Missions trip with my church. It was a life-changing experience for sure. That is where I gained appreciation for Indian culture. When we were traveling, chai stalls filled every corner like Starbucks. We took a pit stop to try a cup, and let me tell you, they were TINY! Like shot glasses. I guess you can say it’s like a shot of espresso.I loved it so much, I wanted to replicate it at home. This version is similar to that in India, where they only use few ingredients or with whatever spice they had. Simple enough to make a batch at home :), reminding me to make do with what we have; don’t take anything for granted ❤️ Cheryl
