Japanese curry rice - Kare raisu 🍛

This Japanese curry rice recipe is nothing special, but there are two tips for making it successful and delicious. This Vermont curry rice is sweet and reminds us of childhood.

1. Cook the potatoes separately. Do not stir-fry the potatoes together with onion and carrots, but cook them separately to prevent the potatoes from losing the shape.

2. STOP THE HEAT when dissolving the curry roux. If you do not turn off the heat, it becomes watery and the curry won't be thicken.

Ingredients

4-6 people
  1. 200 gChicken breast (or any of your favourite meat or seafood)
  2. 1Potato (diced)
  3. 1Carrot (cut into chunks)
  4. 1Onion (finely chopped, sliced)
  5. 1 boxCurry roux (Vermont curry, medium hot)
  6. 900 mlWater

Cooking Instructions

    Cut potato in diced size and heat in the microwave for 3 mins. Set aside.

    Add some oil in a heated pan and cook chicken breast. Once it’s cooked, put them aside in a bowl.

    Cut carrot into chunks and finely chop onion(you can just slice onion too). Cook onion until it becomes fragrant and transparent. Add carrot and cook together.

    Add water. Add cooked potatoes too.

  5. 5

    Once all the ingredients become soft and tender, STOP THE HEAT and add curry roux. Mix and dissolve the roux very well.

    Turn on the fire again. Cook until the curry is thicken. Serve with white rice.
