Ingredients

2 servings
  1. 1/2 cupkabuli chana
  2. as per tasteSalt
  3. 1/4 tspbaking soda
  4. 1medium onion finely chopped
  5. 1medium tomato finely chopped
  6. 2-3 piecesgarlic cloves
  7. as per requirementSalt
  8. 1 tbspchole masala
  9. 1/2 tspred chilli powder
  10. 1/4 tspaamchur powder
  11. 1/4 tspanardana
  12. 1 tspdry kasuri methi
  13. 1/4 tspchat masala
  14. 1/4 tspcorn flour to thickened gravy (optional)
  15. For puris
  16. 1/2 cupwheat flour
  17. 1/2 cupmaida
  18. 2 tbspghee/ oil (moin)
  19. as requiredSalt
  20. as requiredOil for frying
  21. as requiredOnion and lemon slices

Cooking Instructions

    Rinse and soak Kabuli chana for 6-8 hours. Discard soaked water. Pressure cook for 4 whistles with fresh water and baking soda.

    In thick bottom cooking pan add chopped onion and garlic cloves,add salt and saute on low flame till pinkish.

    Add chopped tomato and saute for 2 minutes. Add boiled kabuli chana with water.

  4. 4

    Add chole masala,red chilli powder and anardana. Sprinkle corn flour,salt. Mix well and simmer for 5 minutes till gravy thickened.

    Sprinkle/ hand crushed dry kasuri methi and chat masala. Mix well and off the flame. Transfer it in serving bowl.

    To prepare puris.. in mixing bowl add wheat flour and maida-salt and ghee moin. Mix well. Add little little water and bind into semi stiff dough. Keep covered.

    At the time of serving..knead dough again. Take small lemon size portion from it,roll each into 3" round shape puri, deep fry in hot oil. Similarly prepare all.

    Serve Relish Delicious Hot Zero oil/ ghee Chana Masala with hot puris.
