Ingredients

30-40 mins
6-8 servings
  1. 1fryer chicken cut up. Makes 8 -9 pcs
  2. 1 1/2 cupbuttermilk
  3. 1 Tblsalt
  4. 1 Tblblack pepper
  5. 1 1/2 Tblgarlic powder
  6. 1 Tblsmoked paprika
  7. 1 Tblonion powder
  8. 2 cupsall purpose flour
  9. 2large eggs
  10. 2 cupscrisco
  11. Large cast iron skillet

Cooking Instructions

30-40 mins
  1. 1

    In a large cast-iron skillet on med high heat add crisco

  2. 2

    In a large mixing bowl add buttermilk and chicken. Place in fridge for at least 30 mins-1 hr to marinate.

    In a paperbag or ziploc bag add flour and dry seasonings

  4. 4

    In a medium bowl beat the eggs well,dip chicken 1 by 1 into egg then buttermilk

  5. 5

    Dip into flour then back into the buttermilk then back into the flour. Cover well.

    Gently shake off extra flour and set aside

  7. 7

    Note: Check the temperature of the grease by sprinkling a pinch of flour into the grease. If it bubbles up and fries good it's ready, if it sinks and doesn't have any bubbles, it's not ready

    Once it's ready, place prepared chicken pieces in one at a time, safely.

    Note: Make sure to keep the heat on med to med low. Turn each piece every 3-5 minutes leaving it covered while frying. Also listen to the frying of your skillet. it will let you know when the chicken is ready to turn.

    Once you obtain that beautiful golden brown crust, take the largest piece and check to see if it done with a small knife. If there is bright red or blood on the bone it's got a little longer. 1 whole chicken fryer that's cooked on med high heat should take about 25-30 mins total took time.

    Serve with desired side dishes and enjoy.
