This year for the first time ever I prepared the Christmas turkey and not my mum as she’s visiting me here in the UK. I decided to make it with a twist, and the result was amazing! Happy Christmas everyone 🎄

Cooking Instructions

Preheat the oven to 160C.

Rub 1/2 the butter under the turkey skin, and with the other half rub the top of the skin and the carcass. Place some orange slices under the turkey skin

Rub the top of the turkey skin and the carcass with a mixture of salt and dried rosemary

Add some honey in a bowl and microwave for 10 seconds. Mix honey with orange juice.

Place the turkey on a rack on top of a baking tray, and add some water in the tray to stop the dripping fat from burning

Brush the turkey with the honey and orange juice mixture

Cover with foil and cook for 1hour and 30minutes.

After 1.5hr place the vegetables you want in the tray. We will cook the turkey now for one more hour over 3 phases of 20 minutes. 1. Brush the turkey, cover and cook for 20 minutes. 2. Do the same for another 20 minutes, brush, cover and cook. 3. At the last 20 minutes brush the turkey with the mixture, pour the rest of the mixture in the tray to mix with the veggies, and place in the oven WITHOUT covering it with foil to give it some nice colour.

The turkey is now done. And the vegetables should be well roasted and delicious! Serve with homemade gravy and merry Christmas!
