Pearl millet , commonly known as Bajra/bajri is one of the widely grown Millet. Since the pre-historic time this millet is grown in Africa and Indian sub-continent. Pearl millet is very nutritious millet packed with Carbohydrates, vitamins, minerals and antioxidants. We should consume this millet to get it's nutrients. Pearl millet can be consumed as a millet and also in flour form . Pearl millet flour is gluten free and good for gut health.
We prepare and devour Bajre ki khichdi often but today I have prepared Bajra Pulav with lots of vegetables and with onion garlic. This delicious and health one pot meal is perfect in winter.

Ingredients

50 minutes + so
4 persons
  1. 1cup pearl millet
  2. 1cup malai (cream formed on milk)
  3. 1cup coarsely grinded fresh coconut
  4. 1 tbspghee
  5. 1/4cup finely chopped french beans
  6. 1/4cup finely chopped carrots
  7. 1/4cup finely chopped capsicum
  8. 1cup finely chopped coriander
  9. 1/4cup fresh green peas
  10. 1 tbspgreen chilli paste
  11. 1 tbspsugar
  12. 1 tbsplemon juice
  13. As required Salt to taste

Cooking Instructions

50 minutes + so

    Wash and soak pearl millet over night. Firstly, chop all vegetables and grind coconut and keep ready.

    Add salt to soaked pearl millet and pressure cook it for 5 whistles on low flame.

    Then transfer the cooked pearl millet in colander or sieve so all excess water drains out. Then spread it in large plate to dry.

    Now par boil all chopped vegetables except capsicum.

    Heat ghee in a pan and sauté capsicum for few seconds. Further add parboiled vegetables and sauté for 1-2 minutes. Then turn off the heat.

    Now add sautéed vegetables in cooked pearl millet, which we transfer in a large plate. Mix and add salt, sugar and lemon juice and mix well.

    Further add coconut and coriander and mix well.

    Now add Malai in a pan and turn on the heat. Add prepared pearl millet mixture and mix well and cook for 3-5 minutes on low heat and cover with lid.

    Serve hot with curd,papad etc.
