Give a twist to everyday roti & sabji with this roti sandwich recipe which is made from leftover rotis. Easy saucy filling with variety of veggies, that your kids will love and relish! A quick lunchbox, breakfast, or brunch option.

Cooking Instructions

Heat 2 tsp oil in a kadhai Or pan. Add chopped onions & cook until translucent. Then add all chopped veggies one by one. Stir fry vegges well.

Now add spices like red chili powder, garam masala, pav bhaji madala,schezwan sauce. Combine & cook veggies. (you can also semi-cook veggies) Then add salt, black pepper powder, salt & green coriander.
Cover & cook for five minutes. Sabji / stuffing is ready. Let it cool completely. Once stuffing cooled add boiled & mashed potatoes into cooked sabji. Combine & mix potato well. Sabji stuffing is ready. Keep it aside. - 3
Let's us assemble roti sandwich. Take single roti on platform. Spread green chutney on the half part of roti & spread tomato ketchup rest half part of roti. Then place sabji over spread green chutney of half of the roti. Press sabji gently. Grate cheese(optional). Fold half roti to the other half of roti. Spread butter over the roti fold.

Heat tawa Or griddle or grill pan. Place buttery side on tawa. On low flame roast roti. Apply butter on the top of roti sandwich. Flip roti sandwich to toast well from both sides.

Once roasted, take it off from tawa. serve crispy roti sandwich with tomato sauce or cucumber & onion slices.
