Black sesame seeds kachariyu is a traditional Gujarati sweet. This particular sweet dish is a seasonal variety quite popular in the winter. The origins of kale til kachariyu lie in South Gujarat. I am talking about the Saurashtra (Kathiawad) region. Winter brings special foods. Sesame seed items are a must during winters. Sesame seeds are full of health benifits. It generates heat and gives energy to the body. Kachariyu is very nourishing specially during winter when our bodies need such foods to keep up with cold weather.

Ingredients

  1. 250 gramblack sesame seeds
  2. 2 tbspghee
  3. 2 tbspcrushed gond powder
  4. 1 tbsp big piece of gond
  5. 8-10cashew nuts
  6. 8-10almond
  7. 4 pieceswalnut
  8. 2 tbspmelon seeds
  9. 1 tbspganthoda powder
  10. 2 tbspdry ginger powder
  11. 1 tbspwhite poppy seeds
  12. 2 tbspdry desiccated coconut powder
  13. 1/2 cupgrated kolhapuri jaggery
  14. 3 tbspsesame seeds oil

Cooking Instructions

    First of all, add black sesame seeds in a pan, dry roast it for a while, take it out in a bowl and cool down it. Now heat ghee in the same pan and fry the gond powder and some big pieces of gond till it swells. Now take out this gond with ghee in another bowl and cool down it.

    Now add the cool down sesame seeds in a mixer jar, add cashews, almonds, walnuts, and melon seeds and crush them on pulse mode. Now add gandhoda powder, dry ginger powder, white poppy seeds and desiccated coconut powder and crush it again.

    Now add grated kolhapuri jaggery to this mixture and stir it once with a spoon and crush it again. Now add fried gond powder and sesame oil with ghee and crush it again.

    Now take this mixture in a bowl and mix it properly with your hands. So that the kachariyu is ready. To serve this kachariyau, put a round ring in a plate and press the kachariyau inside and spread it.

    Now our very healthy and nutritious black sesame seeds kachariyu is ready to serve. Sprinkle dry desiccated coconut powder on this kachariyu and serve, garnished with melon seeds, fried gond, cashews, raisins, almonds and tutti fruity.
