材料

One batch
  1. Butter 1 cup
  2. Mascarpone or cream cheese (softened) 113 grams
  3. All-purpose flour 1 1/2 cups
  4. Salt 1/8 tsp
  5. Sugar 1/8 tsp
  6. Preserves 1/2 cup
  7. Powdered sugar For finishing

    Beat butter until light and fluffy, about 2 minutes.

    Add cheese and beat until smooth.

    Add dry ingredients. Beat at slow speed--do not overbeat.

    Flatten dough into a disc and wrap in plastic wrap.

    Chill for at least four hours, or overnight.

    Heat oven to 180 degrees C (350 degrees F).

    Divide dough in half, and return one half to the fridge.

    Roll dough out on a floured surface, 1/8 inch thick.

    Cut into 3-inch squares.

    Place squares on an ungreased cookie sheet.

    Put 1 tsp preserves in center of square.

    Fold each corner to the center of the square, press lightly.

    Bake in batches, 14 to 16 minutes.

    Let cookies sit on cookie sheet for 5 minutes before moving.

    Generously sprinkle with powdered sugar.

コツ・ポイント

Do not overbeat the mixture, or the kolachy will be tough.
Chilling also helps the dough relax. Don't rush!
