Kokani Wade without Bhajani

Cooking Instructions

In a wide bowl take rice flour + wheat flour + besan + fine sooji. Add salt & combine all flours well.Let us dry roast coriander + saunf + fenugreek seeds in a small pan. Let it cool down then grind them fine.

Heat 2 cups water. Add jaggery into water. Allow water to boil. Once water boils pour it over mixed flours. Add dry ground masala powder into the mixed flours.

Stir the mixture with spatula as it's hot.Cover the mixture & rest it for 10 min. After 10 min, mix all flours & knead them very well.

Make a dough & make small dough balls like poori. Now take plastic sheet. Grease it's surface with oil. Place dough ball on plastic sheet. Cover ball with rest of plastic sheet. Place a place over ball & press it to make wada. Take out plate, remove sheet & make hole at its centre. Wada is ready to fry. Wada should be thicker than poori.

Heat oil into kadhai. Drop wada & fry over medium flame. It puffs up nicely. Fry from both sides well. Wada is ready to serve.
